Weekly Cooking Challenge #1: Pan-Grilled Barbecue Shrimp with Roasted Cauliflower & Broccoli

I have ZERO skills in the kitchen, and by zero I mean I’ve burnt toast to a black hard-as-rock thing. Over the months of living alone, I have learned how to cook a few things here and there (how hard is it to pour some oil in a frying pan and just cook things, you know), but I didn’t want to just keep eating spam and eggs with rice forever. My steak rice specialty doesn’t cut it anymore either. So I’ve taken it upon myself to learn something new to cook every week. 

Last week was some Lasagna (I made two batches) and although I wasn’t able to document that one, I was able to document this week’s challenge: Pan-Grilled Barbecue Shrimp!

I’ve been allergic to shrimp  (and crabs) all my life, only last year did I start to eat shrimp & crab while taking antihistamine to counter the allergies. A few days ago I decided to try out shrimp without the medicine and my allergies didn’t act up at all. I tried again the next day, and the day after that and ZERO. Nada. Zilch. Zip. It was a sign. Buy fresh shrimp and learn to cook it.

I then prepared the mixture, and tossed the shrimp into it with my hands, and let it sit in the fridge for 15 minutes before cooking.

I also had some broccoli and cauliflower in the fridge so I decided to pair it with the shrimp. I seasoned the veggies with some salt & pepper, chopped up garlic and olive oil and put them in the oven for about 8-10 minutes, stirring once in a while so all sides of the vegetable get cooked.

 I had so much fun cooking this, and even more fun eating it for dinner and lunch the next day. They turned out SO well. Even my grandpa had a bite of shrimp and said he quite liked it. I enjoyed this dish so much, I plan to head out to the market tomorrow and buy more shrimp. The recipe was a little spicy, and as someone who isn’t a fan of spicy food, I didn’t mind it so much with this dish! The recipe calls for some chili, but I skipped that. The cumin and cayenne pepper were enough for the right amount of spice. I simply can’t get enough of this.

If you’ve got any ideas for what I could cook next, let me know! I still don’t know what to make for next week but I was thinking maybe chicken or pork related since I haven’t tried cooking either.

I feel like a Sim who gains cooking skills whenever she’s in the kitchen. I’m so excited for next week! :-)
